Ingredients

1 x Rack of Beef Short Ribs (4 Bones)

1 x ‘Stefan’s Seasoning’ Dry Rub

BBQ Sauce:

100g x Ketchup

50g x Brown Sauce

20g x Molasses

40g x Dry Rub

Dash Worcester sauce

30g x Brown Sugar

Chilli/Cayenne Pepper to taste

1 x Lime, juiced

Method

Coat the ribs well with the dry rub.

Place the ribs on a trivet in a 120°C oven for around 4-5 hours, until very tender.

The fat of the ribs will render, the outside blacken and the meat shrink back from the bone and swell.  This is normal!

To make the BBQ sauce, combine all of the above ingredients with a whisk.

Scale up as needed for volume, this will keep well covered in the fridge.

When ready to server, baste the ribs with the BBQ sauce in an 180°C oven, for 20-30 minutes until you achieve a glaze.

Cut the ribs through and serve with wedges, homemade coleslaw, beans and our new Barbecue Brew.
